If you are health conscious and have a 9-5 job there is no time for cooking, then this is the recipe for you. It is easy to make and only takes about 20 min to make. I am going to give you two recipes the original and the one I used because I did not have the ingredients.
Ingredients original recipe:
1/2 large chilled seedless watermelon, cut into 15-20 mm cubes
1 small red onion, sliced
1 cup thinly sliced fresh basil leaves
1 cup chopped fresh cilantro
1/2 cup minced fresh mint leaves
2 limes, juiced
1 (4 ounce) package crumbled feta cheese
3 tablespoons olive oil
2 tablespoons balsamic vinegar, or more for taste
Salt and black pepper for taste
Gently toss all ingredients together in a large bowl.
Ingredients to my recipe (per plate):
8-16 pieces of cubed (15mm)
1/4 cup cubed cucumber
1 teaspoon chopped parsley
2 tablespoon crumbled feta cheese (herbs flavour)
2-4 mint leaves
8-16 pieces of sliced red onion
1 teaspoon of olive oil
Plate to own liking
